  Italian Bean & Vegetable Soup
from Pip Mills 3 tbsp Olive Oil 2 Cloves garlic 1 tsp finely chopped rosemary leaves 1 Onion, finely chopped 1 Carrot, finely diced 2 Rashers rindless bacon, diced 425g Can of red kidney beans, rinsed & drained 400g Can of Italian tomatoes in juice, mashed 2 Cups chicken stock 300g Frozen spinach, squeezed dry Salt & freshly ground black pepper Freshly grated parmesan * Heat oil in saucepan on a moderate heat. * Add garlic, rosemary, onion, carrot and bacon, fry gently for 15 minutes or until onion is soft. * Add beans, tomatoes and stock, bring to boil then simmer for 10 minutes. * Add spinach, mix well, bring back to the boil then simmer for 5 minutes. * Taste and season. Serve with plenty of parmesan cheese and crusty bread. YUM

North Sydney Olympic Pool North Sydney Olympic Pool My favourite swimming pool would have to be the iconic 50 metre, heated North Sydney Olympic Pool. This pool was first opened in 1936 with 86 world records being set in its water by swimming greats such as Jon Konrads and Shane Gould. The best time to go is after work – you dive in and your worries drift away. Swimming backstroke under the stars is heaven and so is the view of the famous smile of Luna Park, the Harbour Bridge and sails of the Opera House. The salt-water makes it easier for you to float and so you also swim faster!

Pelican An awesome little tapas bar and dining area. Its design and layout seem to work really well. Tall communal bar tables and outdoor wooden benches – under heaters for winter. I love all their food combinations and find myself ordering ‘my favourites’. A great local mid range option. (its always super busy)

  Point Erin Fun Pool
Point Erin Fun Pool Point Erin Pool is a great local pool to take the family in the summer. The kids will play for hours on the diving board, slide and pools. And I can lie back in the sun, read my book and event take in the view of Auckland Harbour Bridge. One of Auckland's best pool facilities!

  Prawn Primavera Risotto
from Di Ash 1 cup (155g) frozen peas 155g thin asparagus cut into short lengths 1¼ litres chicken stock 1 cup dry white wine 60 g butter 2 tblspns olive oil 1 carrot, finely diced 1 onion, finely chopped 1 zucchini, finely diced 250g aborio rice ½ cup grated parmesan 300g green prawns * Cook peas & asparagus in boiling water for 1-2 minutes * Drain & set aside. * Put stock & wine in saucepan & maintain at simmering point. * Heat butter & oil in a heavy-based saucepan. * Add prawns & stir until pink. * Remove & set aside. * Add carrot, onion & zucchini & stir for 2-3 mins. * Add rice to pan & stir for 1-2 mins until well coated. * Add ½ cup hot stock; stir over low heat until absorbed. * Repeat until all stock has been added and the rice is tender & creamy but still quite moist (25-30 mins) * Stir through the parmesan, peas, asparagus & prawns until heated through. * Serve at once with extra parmesan & crusty bread.
 
   
   


  Stir- Fried Pork Fillets with Hoisin Sauce
supplied by Catherine Kidd 600g pork fillets cut into 5mm slices 1 small cucumber 2 tablespoons vegetable oil 1 tablespoon light soy sauce Marinade 3 garlic cloves, finely diced ¼ cup hoisin sauce 2 tablespoons malt vinegar 2 tablespoons shao hsing wine or dry sherry 1 tablespoon light soy sauce 2 tablespoons white sugar 1 teaspoon five-spice powder ½ teaspoon sesame oil ½ teaspoon sea salt * Combine pork with marinade ingredients into a large bowl, cover and leave to marinate in the refrigerator for 30 mins. * Using a vegetable peeler, finely slice cucumber lengthways into ribbons. Set aside. * Heat oil in a hot wok until surface seems to shimmer slightly. Add half the marinated pork and stir fry for 30 seconds. * Remove from wok with a slotted spoon and set aside. Add remaining pork with all the marinade and stir fry 30 seconds. * Return reserved pork to wok with soy sauce and stir fry for a further minute or until pork is just cooked through and lightly browned. * Serve immediately, garnished with reserved cucumber, and steamed rice.

4 apples, peeled and chopped 1 teaspoon lemon juice pinch of cinnamon (optional) 1 - 2 tubs vanilla fruche 4 tablespoons oven baked muesli * Place the apples lemon juice and cinnamon into a saucepan. * Cover a cook over a gentle heat until the apples are soft. Allow to cool. * Place a few tablespoons of apple compote into a serving dish and top with 1 - 2 tablespoons of vanilla fruche and muesli. A healthy and delicious desert
